Our Yucatan farmers have already been diversifying their crops. One of our exciting projects is starting a Tahiti Lime plantation. The picture below shows a recent grafted tree being planted. Yigal, our Manager for the farming cooperative, noted "We have come to realize that a small amount of cash crops can give us a boost whenever other crops are stopped or whatever the world situation we can give support to local families by entering into a national market that has a stable demand." Pumpkins and beans are also being planted!
